Try 'subst':
(%i1) cosh(x^2) + sinh(x);
(%o1) cosh(x^2)+sinh(x)
(%i2) subst([cosh=zcosh, sinh = zsinh],%);
(%o2) zcosh(x^2)+zsinh(x)
