That's seems strange. Maxima 5.11.0 should not be looking in the 5.9.1
directory. It seems like an error in the Debian package.
The documentation for Maxima comes in a separate Debian package and
it has some files which are necessary. If you have not installed the
documentation package, try installing it.
In Debian I'd recommend that you download the source tar.gz file
and build Maxima yourself. It is not very hard and you can select
among four different versions of Lisp (sbcl, cmucl, gcl, clisp) instead
of just gcl which is the only choice in the official Debian package.
