It's probably possible via calls to Lisp functions,
but even so I think it would probably lead to confusion
(mental and/or algorithmic).
Maybe for your purposes it would be enough to use a
variable, say "mygamma", and fudge its properties so
that it displays as %gamma in Maxima output
or \gamma in TeX output. I can explain if you are interested.
What, exactly, are you trying to achieve?
